Rita’s Breakfast Dance

Serves 2 as a breakfast - we like it accompanied with wholemeal pitas or if we have guests we leave out the eggs and use this to serve 4 as a side dish to accompany your sausages, mushrooms, bacon, hash browns and whatever style of eggs our guest prefer. It’s great to wake up your mouth after a heavy night on the ‘plonk’!!

Ingredients

  • medium sized red or white onion – chop finely
  • 1lb skinned fresh tomatoes or 1 can of chopped tomatoes if you are feeling lazy.
  • If you are using fresh peeled tomatoes chop them into small pieces say quarter and quarter again – it’s not a science so don’t get too emotional over it!!
  • 1 chopped de-seeded red chilli pepper or lazy chilli paste
  • ½ teaspoon of Oregano
  • 2 to 3 teaspoons of brown/white sugar
  • 2 0r 4 fresh/free range eggs
  • ¼ pint of boiling water (if using fresh tomatoes)

Use approx 2 or 3 tablespoons of olive oil in a frying pan over a medium heat.

Add onions and fry gently until they start to become clear

Add sugar and chilli - continue to fry (stirring a little) for another 2 or 3 minutes

Add oregano stir in for approx 1 minute

Add tomatoes (plus water only if using fresh)

Turn heat up until tomatoes and water are bubbling away then reduce heat back to a medium temperature.

Now leave this for approx 10/15 minutes – keep checking and stir gently occasionally to reduce the ingredients.

When mixture has thickened/reduced after this time make 2 or 4 (depending how hungry you are!) Gaps with a serving spoon and add your eggs.

Once eggs are in place just leave for a minute or so to start to cook. Reduce heat a little.

Gently cover the eggs completely with surrounding tomato and leave for another 5 minutes or so remembering roughly wear you hid them!!

Turn off heat and leave to stand for about 5 minutes - tomato retains its heat really well so don’t risk burning your mouth!! I have many times and it hurts!!!

Serve up with additions of your choice – I also like a little brown sauce and slice fresh beetroot on the side... ENJOY!!

If you don’t fancy the chilli leave it out – ditto for the eggs.

Bread and Dance

This is the original recipe which my Mum did for me as a child…..follow the above recipe but add small chopped pieces of bacon into the pan at the same time as the onion then follow recipe.

This time though when it has reduced enough leave it to cool down then put it in a bowl and put in fridge to chill for at least anhour.

Then make the biggest doorstep sandwiches you can from your fresh/organic bread and spread on thickly.

All my friends used to beg me to swap pack ups when we went fishing, happy days!!

...and finally...

Lunchy Munchy

Take some sunflower sprouts & splash of olive oil and soy sauce, a bit of pepper and some small chopped avocado pieces, whack it around the pan for about 3 or 4 minutes just to coat everything... delicious!
